Matt's Sizzlin' Mexican Fiesta

This week's C Cubed in Brooklyn Heights was a great success. Another gourmet chef among us! All at a beautiful apartment great for dinner parties.

Conversation got intense as we jumped right into politics with the chaos in Albany and even taking it back to Spitzer and Clinton.

Apps consisted of:
  • fresh salsa with touch of jalapeno for a bit of a kick
  • fresh guacamole
  • a whole lotta tortilla chips
  • drinks
Continuing into the night, we enjoyed some salacious conversation about professional athlete salaries and DIY home improvement. I was in awe of Rhonda's skills to install toilets and floors. And having the courage to pull the nail out after shooting herself with a nailgun. Ouch!

Dinner consisted of
  • Black bean salad with mango and peppers
  • Spinach salad with roasted peppers and pumpkin seeds, and Queso Fresco (Mexican white cheese, like feta)
  • Pork enchiladas
  • More drinks
Dessert, from a Polish bakery in Williamsburg, was an yummy mix of
  • apple cheesecake
  • cinnamon pound cake
  • sugar cookies with almonds and maraschino cherries

All in all, a great night in Brooklyn Heights.


The next C Cubed will be a Kiran's place. We'll carpool to Queens. Bring your tennis raquets and bathing suits. BBQ time!
